White Chocolate Double Nut Clusters


These clusters remind me of rice krispy treats, but they are even better! As a kid and even now I enjoy having rice krispy treats. These clusters are filled with ingredients that add crunchiness and a balanced sweetness to them! The first time I tried these clusters I just couldn’t stop eating them. (Thank you to my aunt Inna for sharing this recipe with me!)


These clusters are the perfect last minute dessert. Preparing for Easter, I was running around cooking and baking and decided to make a simple dessert that everyone would enjoy. They were a hit! This recipe calls for only 4 ingredients and can be done in less then 30 minutes.




Prep Time- 12 minutes Cook Time- 15 minutes



Ingredients

  • 2 1/2 Cups white chocolate chips

  • 2 Cups Rice Krispies cereal

  • 2 Cups Raw or unsalted sunflower seeds

  • 2 Cups sliced almonds

  • Dark chocolate for garnish




Instructions

  1. Fill a medium size pot halfway with water, set to boil.

  2. Line a baking sheet with parchment paper. Spread 2 Cups of sliced almonds and 2 Cups of sunflower seeds onto the pan and roast for 3-5 minutes. MAKE SURE YOU KEEP AN EYE ON THEM BECAUSE THEY WILL BURN FAST. Once roasted set aside to cool.

  3. Once your water comes to a boil take a heat proof bowl or a smaller pot and put it over the boiling pot. Add 2 1/2 Cups of white chocolate chips and mix until smooth.

  4. Once your chocolate is melted add in your almonds, sunflower seeds, and 2 Cups of Rice Krispies cereal. Mix until the chocolate is well incorporated.

  5. Line a baking sheet with parchment paper and spoon out your clusters. Let them cool until the chocolate hardens. Your clusters will be all different shapes and sizes but that's the beauty of them!

  6. Melt your dark chocolate. Place into a pastry bag and swirl the tops of the clusters.
