Typically I'm not the biggest fan of fish, but I really enjoy this dish. It is garnished with a savory Parmesan topping. This Sawi can be served with rice, spaghetti, or mashed potatoes.
Prep time: 15 minutes Cook time: 30 minutes
Ingredients
4 boneless Swai Fillets
4 Tbsp butter, softened
8 Tbsp mayo
2 Tbsp grated Parmesan cheese
1/4 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp fresh or dry parsley
1 tsp Mrs. Dash
1 Tbsp vegetable oil
Instructions
Pre-heat oven to 350*F
Line your baking sheet with foil. Spread 1 Tbsp of vegetable oil out onto the foil.
Lay out your Swai fillets onto the pan. Lightly salt and pepper your fillet.
In a small bowl, mix together 8 Tbsp mayo, 2 Tbsp grated Parmesan cheese, 1/4 tsp salt, 1 tsp pepper, 1 tsp paprika, 1 tsp fresh or dry parsley, and 1 tsp of Mrs. Dash.
Spread your mayo mixture generously onto your fillets.
Sprinkle dry or fresh parsley on top. Cook for 25- 30 minutes until the mayo mixture starts to turn golden brown.
Cool for a few minutes then dig in!
