These homemade chicken fritters are so easy and tasty. They are crispy on the outside and juicy on the inside. This recipe is also great for meal planning. If I know I'll be having a hectic week I make a huge batch and just pop them in the freezer, so that we can reheated them later on.
Most enjoyable with:
ranch
honey mustard
on some bread
with a side of mashed potatoes
Ingredients for this recipe:
2 large Chicken Breasts, finely diced
2 Eggs
1/3 cup all-purpose Flour
1/4 cup Ranch
1/2 cup Mayo
2 cups Mozzarella Cheese
1/4 cup grated Parmesan Cheese
1/4 cup freshly chopped Parsley
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Mrs. Dash
1 teaspoon Paprika
1/4 cup Vegetable Oil
Instructions:
Dice chicken into 1/3in thick pieces then place into a large bowl.
Add 2 eggs, 1/2 cup mayo, 1/4 cup ranch, and all seasonings into chicken, until well combined.
3. Gradually add in 1/3 cup all-purpose flour, 1/4 cup grated parmesan cheese, 2 cups mozzarella cheese, and 1/4 cup freshly chopped parsley.
4. Heat a large non-stick pan over medium heat and add 1/4 cup vegetable oil. Once oil is hot, scoop out a heaping tablespoon at a time onto pan. Lightly flatted top and fry 3-5 minutes on each side or until chicken is golden brown and fully cooked through. (inside should be all white) Repeat with remaining fritters and add more oil as needed.
