Buttermilk Pancakes

Every Saturday I was tugged out of bed by my little brother to make his favorite pancake (as he calls them). These are the perfect start to any day. They can be topped with syrup and/or whipped cream to make anyone's day.



Prep Time- 30 minutes Cook Time- 20 minutes



Ingredients


  • 1 1/2 cups of milk

  • 4 Tbsp of vinegar

  • 1/2 cup of sugar

  • 2 cups of flour

  • 2 tsp of baking soda

  • 2 tsp of baking powder

  • 1 tsp of salt

  • 2 medium eggs

  • 5 Tbsp of melted butter

  • 1 Tbsp of vanilla extract



Instructions


For buttermilk:

  1. In a small bowl, combine 1 1/2 cups of milk and 4 Tbsp of vinegar.

  2. Set aside for 10 minutes to let the buttermilk set.


For Pancakes:

  1. Combine 2 cups of flour, 2 tsp of baking power, 2 tsp of baking soda, and 1 tsp of salt and set aside.

  2. In a medium size bowl whisk together 2 medium eggs, 5 Tbsp melted butter, 1 Tbsp vanilla extract, and the buttermilk mixture.

  3. Pour the dry ingredients into the wet ingredients and mix for 30 seconds. (If you see flour bumps that’s ok, it will blend in once the mixture rises.) Let mixture set for 10 minutes.

  4. Preheat your frying pan to medium heat (if using frying pan add butter) or electric griddle to 350℉

  5. In a frying pan or electric griddle, add a spoonful of the batter. When the pancakes start to bubble flip over and cook for 2-3 more minutes. (the pancakes should be a golden brown.)

  6. Remove and enjoy :)
